Ingredients:

• 300 g spaghetti
• 1 cup diced bacon
• 3 egg yolks
• 2 whole eggs
• 1 cup freshly grated Parmesan cheese
• Black pepper (to taste)
• Salt (to taste)

Directions:

In a pot, bring salted water to a boil and cook the spaghetti until al dente. Drain and set aside.
In a skillet, add a drizzle of olive oil and cook the bacon until crispy. Set aside.
In a bowl, whisk the egg yolks with the whole eggs. Add the grated Parmesan and mix well.
Gradually add a little of the pasta cooking water to the egg-and-cheese mixture, stirring constantly to incorporate and form a cream. Do this over a bain-marie, being careful not to overcook the eggs.
As soon as the cream is smooth, remove it from the bain-marie to prevent curdling.
Toss the spaghetti with the cream, season with black pepper and salt to taste, and finish by adding the crispy bacon.

Serve and enjoy.
