Ingredients

  • Olive oil
  • 1/2 cup onion
  • 500 g chicken (or hen), cut into cubes
  • 4 garlic cloves
  • 3 tomatoes
  • 1 cup leeks
  • 1 cup Portuguese sausage
  • 2 cups rice
  • 1 cup dry white wine
  • Salt
  • 1 liter vegetable stock
  • 1/2 cup scallions
  • Batata palha (optional)

Directions:

Heat a drizzle of olive oil in a large pot and sauté the onion until translucent. Add the chicken and let it lightly brown. Add the chopped garlic and sauté for a few more minutes. Add the tomatoes, leeks, and Portuguese sausage, all finely chopped. Stir well.
Add the rice (do not rinse it), the dry white wine, and season with salt to taste. Once it starts to boil, pour in the vegetable stock, cover the pot, and cook for about 20 minutes, until the rice is tender and the liquid is absorbed.
Finish with chopped scallions, and if you’d like, serve topped with batata palha.
