Ingredients:

• 1 onion, finely chopped
• Olive oil, to taste
• Salt, to taste
• 1 pinch of sugar
• 1 cup dates, diced
• 3 tomatoes, chopped
• Chives, finely chopped, to taste
• Arugula leaves, for garnish

Directions:

Caramelize the finely chopped onion in a skillet with olive oil, salt to taste, and a pinch of sugar.
Once golden, add another small pinch of salt and stir in the diced dates.
Combine the chopped tomatoes with the onion and caramelized dates. Season with finely chopped chives and a drizzle of olive oil. Adjust the salt if needed.
For plating, use a ring mold to give the dish a refined finish.
Finish with arugula leaves and a drizzle of olive oil.
Now it’s ready to serve.
