Ingredients:


• 750 ml milk
• 250 g butter
• 500 g sour tapioca starch (polvilho azedo)
• 500 g sweet tapioca starch (polvilho doce)
• 25 g salt
• 4 eggs
• 500 g meia cura cheese (semi-aged cheese)
• 50 g provolone cheese

Directions:


In a saucepan, add the milk and butter and heat until it comes to a boil.
In a separate bowl, combine the sour tapioca starch with the sweet tapioca starch and add the salt.
Once the milk and butter mixture comes to a boil, add the starch-and-salt mixture to the saucepan, stirring well until you have a smooth, uniform dough.
Add the cheeses (meia cura and provolone) and mix until fully incorporated.
Let the dough rest in the refrigerator for 1 hour.
After resting, shape the pão de queijo into your preferred size.
Place on a baking sheet and bake in a preheated oven at 180°C for about 20 minutes, or until golden.
